How to Make Apple Crumble Chia Pudding
- In a blender, combine yogurt, apple butter, dates, miso, vanilla, cinnamon, cardamom, salt, and soy milk; blend everything until smooth and creamy.
- In a bowl or container, mix chia seeds with the blended mixture. Let sit for 5 minutes to thicken, whisk again to prevent clumps, and then cover. Refrigerate for at least 1 hour until fully set.
- In a food processor, pulse oats, walnuts, dates, and a pinch of salt until the mixture is crumbly and resembles coarse crumbs.
- Sauté the diced apples, maple syrup, cinnamon, and water in a pan over medium heat for 3-4 minutes until they are softened and fragrant.
- Layer the chia pudding in jars or bowls, top with the stewed apples, and sprinkle the crumble mixture generously on top. Serve with extra apple butter and a drizzle of maple syrup, if desired.
- Optional: Garnish with a sprinkle of cinnamon for an extra touch of warmth.
