For the Meatloaf
  • 1 lb Ground Beef (80/20)
  • 8 oz Bacon (thick-cut)
  • 1 cup Cheddar Cheese (shredded) sharp cheddar preferred
  • 1 cup Panko Breadcrumbs gluten-free for low carb
  • 1/2 cup Dill Pickles (chopped)
  • 1/2 cup Ketchup regular or sugar-free
  • 1 tbsp Mustard
  • 2 tbsp Light Brown Sugar adjust to taste
  • 1 tbsp Worcestershire Sauce
  • 1 medium Onion (finely chopped) or onion powder
  • 1 tsp Garlic Powder
  • 1 tsp Salt
  • 1/2 tsp Pepper
For the Glaze
  • 1/2 cup Ketchup
  • 1 tbsp Mustard
  • 2 tbsp Light Brown Sugar adjust to taste

Method
 

How to Make Bacon Cheeseburger Meatloaf
  1. Preheat your oven to 375°F (190°C).
  2. Combine the ingredients in a large bowl. Mix together ground beef, crispy bacon pieces, shredded cheddar cheese, panko breadcrumbs, eggs, finely chopped onion, mayonnaise, dill pickles, mustard, Worcestershire sauce, garlic powder, salt, and pepper until just combined.
  3. Transfer the mixture into a loaf pan and press evenly. Bake for 30 minutes.
  4. Prepare the glaze by mixing ketchup, mustard, and light brown sugar in a small bowl. Spread the glaze over the meatloaf after the first baking time.
  5. Return the meatloaf to the oven for another 10 minutes. Sprinkle remaining cheddar cheese on top and bake for an additional 5 minutes until the cheese is melt and golden.
  6. Garnish with reserved bacon bits and pickle slices before serving.
