Instructions
- Preheat your oven to 350°F (175°C).
- Brown the ground beef and chopped onion in a large skillet over medium heat until the beef is no longer pink, about 5-7 minutes.
- Mix in the taco seasoning, refried beans, and water into the skillet. Stir well and allow to heat through for about 2-3 minutes.
- Whisk together the cream of mushroom soup and sour cream in a separate bowl until smooth.
- Layer 3 tortillas at the bottom of a greased 9x13 inch baking dish. Spread half of the soup mixture over the tortillas, followed by half of the beef mixture, and top with 1 cup of cheese.
- Repeat the layering process: add 3 more tortillas, the remaining soup mixture, the rest of the beef mixture, and finish with the remaining cheese on top.
- Bake uncovered for 20 minutes until the cheese is melted and bubbly.
- Top with fresh chives or diced tomatoes for extra flavor.
