Ingredients
  

For the Casserole
  • 1 lb Ground Beef or ground turkey for a lighter option
  • 1 small White Onion yellow onion works too
  • 1 packet Taco Seasoning homemade seasoning can elevate taste
  • 2 cans Refried Beans or black beans for texture
  • 1 cup Water
  • 1 can Cream of Mushroom Soup cream of chicken is a good alternative
  • 1 cup Sour Cream or Greek yogurt for a healthier option
  • 6 taco-size Flour Tortillas whole wheat tortillas are healthier
  • 2 cups Shredded Mexican Blend Cheese or cheddar/pepper jack for zest
For the Toppings
  • 1 cup Sour Cream to add creaminess
  • 0.25 cup Chives or green onions
  • 2 cups Shredded Lettuce for crunch
  • 1 cup Diced Jalapeños adjust for heat preference
  • 1 cup Diced Tomatoes any variety works well

Method
 

Instructions
  1. Preheat your oven to 350°F (175°C).
  2. Brown the ground beef and chopped onion in a large skillet over medium heat until the beef is no longer pink, about 5-7 minutes.
  3. Mix in the taco seasoning, refried beans, and water into the skillet. Stir well and allow to heat through for about 2-3 minutes.
  4. Whisk together the cream of mushroom soup and sour cream in a separate bowl until smooth.
  5. Layer 3 tortillas at the bottom of a greased 9x13 inch baking dish. Spread half of the soup mixture over the tortillas, followed by half of the beef mixture, and top with 1 cup of cheese.
  6. Repeat the layering process: add 3 more tortillas, the remaining soup mixture, the rest of the beef mixture, and finish with the remaining cheese on top.
  7. Bake uncovered for 20 minutes until the cheese is melted and bubbly.
  8. Top with fresh chives or diced tomatoes for extra flavor.
