How to Make Baked Salmon with Spinach
  1. Heat a splash of olive oil in a skillet over medium heat. Add sliced onions and sauté until they're translucent, about 3-4 minutes. Toss in minced garlic for another 30 seconds until fragrant.
  2. Stir in the thawed and drained spinach, cooking until heated through, about 2-3 minutes. Season generously with salt and pepper, then mix in sour cream until well combined.
  3. Preheat your oven to 175°C (347°F). Lightly slice and season the salmon fillets with salt and pepper. Sear each side in a separate pan for 2 minutes to lock in moisture and flavor.
