How to Make Baked Salmon with Spinach
- Heat a splash of olive oil in a skillet over medium heat. Add sliced onions and sauté until they're translucent, about 3-4 minutes. Toss in minced garlic for another 30 seconds until fragrant.
- Stir in the thawed and drained spinach, cooking until heated through, about 2-3 minutes. Season generously with salt and pepper, then mix in sour cream until well combined.
- Preheat your oven to 175°C (347°F). Lightly slice and season the salmon fillets with salt and pepper. Sear each side in a separate pan for 2 minutes to lock in moisture and flavor.
- Grease a baking dish and place the salmon skin-side down. Spread the creamy spinach mixture evenly over each fillet, then sprinkle a generous layer of mozzarella on top.
- Place in the preheated oven and bake for 15-20 minutes, or until the salmon is opaque and flakes easily with a fork. Ensure the cheese is golden and bubbly—check for an internal temperature of 63°C (145°F).
- Once baked, allow the dish to rest for a few minutes. Plate the salmon with the creamy spinach topping and enjoy every bite!

Notes
For optimal flavor, choose fresh ingredients and do not shy away from seasoning generously. Garnish with fresh herbs for added color and taste.
