Ingredients
  

For the Cookies
  • 3 cups All-Purpose Flour Provides the necessary structure
  • 1 cup Ghee Essential for richness
  • 1 cup Sugar Use fine granulated sugar for best results
  • 1/2 cup Water Used to create a syrup
  • 1/2 cup Honey Infuses the cookies with sweetness
For the Coating
  • 1 cup Toasted Sesame Seeds Coats one side of the cookies
  • 1 cup Crushed Pistachios Adds crunch and flavor

Method
 

How to Make Barazek
  1. Mix the all-purpose flour and ghee in a bowl for about 7 minutes. Refrigerate for 30-35 minutes.
  2. In a small bowl, combine the sugar, water, and honey. Stir until the sugar is dissolved.
  3. Pour the syrup mixture over the chilled dough and gently work it in. Refrigerate again for 30-40 minutes.
  4. In another bowl, mix together the toasted sesame seeds with a bit of honey and sugar. Add water to lighten the mixture.
  5. Form the dough into small balls, coating each with crushed pistachios followed by sesame mixture. Flatten slightly.
  6. Place the cookies on a parchment-lined baking sheet and bake at 338°F (170°C) for 15-18 minutes.
  7. Allow the cookies to sit for 2 minutes, then transfer to a cooling rack to cool completely.
