How to Make Barazek
- Mix the all-purpose flour and ghee in a bowl for about 7 minutes. Refrigerate for 30-35 minutes.
- In a small bowl, combine the sugar, water, and honey. Stir until the sugar is dissolved.
- Pour the syrup mixture over the chilled dough and gently work it in. Refrigerate again for 30-40 minutes.
- In another bowl, mix together the toasted sesame seeds with a bit of honey and sugar. Add water to lighten the mixture.
- Form the dough into small balls, coating each with crushed pistachios followed by sesame mixture. Flatten slightly.
- Place the cookies on a parchment-lined baking sheet and bake at 338°F (170°C) for 15-18 minutes.
- Allow the cookies to sit for 2 minutes, then transfer to a cooling rack to cool completely.
