  • 10 oz Enchilada Sauce Choose red or green based on your preference.
  • 14.5 oz Diced Tomatoes Fresh or canned depending on what you have on hand.
  • 15 oz Black Beans Rinse before using to remove excess sodium.
  • 1 tsp Ground Cumin Substitute with taco seasoning for a quick alternative.
  • 1 tsp Chili Powder Adds depth and a hint of heat.
  • Salt & Pepper Adjust to taste.
  • 8 Corn Tortillas Flour tortillas can be used for a softer texture.
  • 2 cups Cheddar Cheese Substitute with Colby Jack if preferred.
  • 2 cups Monterey Jack Cheese Can be replaced with additional cheddar.
  • Fresh Cilantro Optional, use as a garnish.

Method
 

How to Make Beef Enchilada Casserole
  1. Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish.
  2. In a skillet over medium heat, brown the ground beef with diced onion and minced garlic until fully cooked. Drain excess fat.
  3. Stir in the enchilada sauce, diced tomatoes, black beans, ground cumin, and chili powder. Simmer for about 5 minutes before seasoning with salt and pepper.
  4. Place 4 corn tortillas at the bottom of the greased dish, overlapping if necessary.
  5. Spread half of the beef mixture over the tortillas, then sprinkle half of the shredded cheeses on top. Layer another 4 tortillas, then remaining beef mixture and rest of the cheese.
  6. Bake for 25 minutes or until the cheese is bubbly and golden brown.
  7. Let the casserole cool for a few minutes before slicing and serving. Garnish with cilantro if desired.
