Ingredients
  

For the Skillet
  • 2 tablespoons Avocado Oil Can substitute with olive oil
  • 1 lb Ground Beef or Ground Turkey Main protein source
  • 1/2 pcs Red Bell Pepper, diced Adds a sweet crunch
  • 1/2 pcs Orange Bell Pepper, diced Any color bell pepper will do
  • 3 tablespoons Taco Seasoning For classic taco flavor
  • 1 can (15 oz) Pinto Beans or Black Beans Adds heartiness
  • 1/3 cup Corn Frozen or fresh
  • 1/4 cup Taco Sauce or Red Enchilada Sauce Keeps the filling moist
  • 1/3 cup Chopped Scallions Adds fresh flavor
  • 2/3 cup Shredded Mexican Cheese Use cheddar or dairy-free cheese
  • to taste Salt and Pepper Adjust according to your preference
  • 5-6 Corn Tortillas, cut into triangles Provides a crispy base
For the Toppings
  • Taco Toppings Sliced avocado, chopped cilantro, sour cream, lime wedges, and fresh tomatoes.

Method
 

How to Make Beef Taco Skillet
  1. Preheat your oven to 425°F (218°C).
  2. In a large cast iron skillet, heat the avocado oil over medium heat.
  3. Add the ground beef (or turkey) and cook until mostly brown, about 5-7 minutes.
  4. Toss in the diced red and orange bell peppers and sauté for 2-3 minutes.
  5. Stir in the taco seasoning, choice of beans, corn, and taco sauce and let simmer for 2 minutes.
  6. Remove from heat and fold in the chopped scallions and ¼ cup of cheese.
  7. Gently mix in the tortilla triangles, leaving some exposed.
  8. Sprinkle remaining cheese on top and bake for about 15 minutes.
  9. Allow to cool slightly before adding toppings and enjoy!
