How to Make Beef Taco Skillet
- Preheat your oven to 425°F (218°C).
- In a large cast iron skillet, heat the avocado oil over medium heat.
- Add the ground beef (or turkey) and cook until mostly brown, about 5-7 minutes.
- Toss in the diced red and orange bell peppers and sauté for 2-3 minutes.
- Stir in the taco seasoning, choice of beans, corn, and taco sauce and let simmer for 2 minutes.
- Remove from heat and fold in the chopped scallions and ¼ cup of cheese.
- Gently mix in the tortilla triangles, leaving some exposed.
- Sprinkle remaining cheese on top and bake for about 15 minutes.
- Allow to cool slightly before adding toppings and enjoy!
