How to Make Best Bourbon Glaze Meatloaf
- In a large bowl, combine ground beef, bread crumbs, eggs, diced onion, bell pepper, jalapeño, onion powder, garlic powder, all-purpose seasoning, milk, Worcestershire sauce, salt, and pepper. Mix until just combined to preserve tenderness.
- In a small pot over low heat, mix apricot jam, dark brown sugar, sriracha, bourbon, BBQ sauce, and water. Stir gently until combined and smooth. Bring to a brief boil, then remove from heat to avoid burning.
- Line a baking tray with foil for easy cleanup. Shape half of the meat mixture into a loaf in the center, creating a well. Fill it with cheese and cover with the remaining meat mixture to encase the cheese.
- Generously coat the meatloaf with bourbon glaze. Bake at 350°F (175°C) for about 60 minutes; check that the center reaches 155°F (68°C) with a meat thermometer. Baste with extra glaze halfway through for added flavor.
