Method

How to Make Best Bourbon Glaze Meatloaf
  1. In a large bowl, combine ground beef, bread crumbs, eggs, diced onion, bell pepper, jalapeño, onion powder, garlic powder, all-purpose seasoning, milk, Worcestershire sauce, salt, and pepper. Mix until just combined to preserve tenderness.
  2. In a small pot over low heat, mix apricot jam, dark brown sugar, sriracha, bourbon, BBQ sauce, and water. Stir gently until combined and smooth. Bring to a brief boil, then remove from heat to avoid burning.
  3. Line a baking tray with foil for easy cleanup. Shape half of the meat mixture into a loaf in the center, creating a well. Fill it with cheese and cover with the remaining meat mixture to encase the cheese.
  4. Generously coat the meatloaf with bourbon glaze. Bake at 350°F (175°C) for about 60 minutes; check that the center reaches 155°F (68°C) with a meat thermometer. Baste with extra glaze halfway through for added flavor.
  5. Allow the meatloaf to rest for 30 minutes before slicing. This helps retain moisture. Serve warm, drizzled with more bourbon glaze to enhance its tempting allure.
