How to Make Bok Choy Chicken Soup
- Heat oil in a large pot over medium heat. Add chopped onion and sauté for 3-4 minutes until softened.
- Stir in minced garlic and grated ginger, cooking for 1-2 minutes until fragrant.
- Add chicken thighs and chicken broth; bring to a boil. Reduce heat and simmer for 25-30 minutes until chicken is cooked.
- Remove chicken, shred it and return to the pot.
- Add bok choy, carrots, fish sauce, and soy sauce. Simmer for 5-7 minutes until vegetables are tender.
- Stir in lime juice and adjust seasoning with salt and pepper to taste.
- Ladle soup into bowls and garnish with green onions and cilantro.
