  • 1 pound Boneless, Skinless Chicken Thighs
  • 4 cups Chicken Broth or vegetable broth for a vegetarian option
For the Vegetables
  • 4 cups Chopped Bok Choy or baby spinach/kale as substitutes
  • 2 medium Carrots sliced
For Flavor Enhancement
  • 1 tablespoon Fish Sauce or soy sauce as a substitute
  • 2 tablespoons Low-Sodium Soy Sauce or Tamari
  • 2 tablespoons Lime Juice fresh lime preferred
  • to taste Salt

How to Make Bok Choy Chicken Soup
  1. Heat oil in a large pot over medium heat. Add chopped onion and sauté for 3-4 minutes until softened.
  2. Stir in minced garlic and grated ginger, cooking for 1-2 minutes until fragrant.
  3. Add chicken thighs and chicken broth; bring to a boil. Reduce heat and simmer for 25-30 minutes until chicken is cooked.
  4. Remove chicken, shred it and return to the pot.
  5. Add bok choy, carrots, fish sauce, and soy sauce. Simmer for 5-7 minutes until vegetables are tender.
  6. Stir in lime juice and adjust seasoning with salt and pepper to taste.
  7. Ladle soup into bowls and garnish with green onions and cilantro.
