- In a large bowl, whisk together the bourbon, soy sauce, honey, minced garlic, olive oil, salt, and pepper until well combined.
- Place the chicken thighs into a dish and pour the marinade over them, ensuring they're fully coated. Cover and refrigerate for at least 1 hour.
- Preheat your oven to 400°F (200°C).
- Heat olive oil in an oven-safe skillet over medium-high heat. Sear the marinated chicken thighs skin-side down for about 5-7 minutes.
- Scatter fresh blackberries all around the chicken in the skillet.
- Carefully transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
- Halfway through baking, spoon some of the pan juices over the chicken. Let the chicken rest for about 5 minutes before serving.
