  • 2 cups Brussels Sprouts Halved for better roasting.
  • 2 medium Shallots Diced.
  • 12 oz Pasta Choose rigatoni, penne, or farfalle.
For the Flavor
  • 3 tbsp Olive Oil High-quality recommended.
  • 2 cloves Garlic Minced or grated.
  • 1/2 tsp Red Pepper Flakes Adjust to taste.
  • 1 tbsp Lemon Juice Freshly squeezed.
For the Finish
  • 1/2 cup Parmesan Cheese Substitute with dairy-free cheese if desired.
  • 1 tsp Fresh Thyme Fresh is best.

Method
 

Cooking Instructions
  1. Preheat the oven to 425°F (220°C).
  2. Combine bacon, butternut squash, Brussels sprouts, and shallots on a rimmed baking sheet. Drizzle with olive oil, season with salt and pepper, and toss to coat.
  3. Roast for 10 minutes, then stir. Continue roasting for another 10-15 minutes until vegetables are tender and caramelized.
  4. Cook pasta according to package instructions, reserving 1 cup of pasta water.
  5. Sauté garlic and red pepper flakes in olive oil over medium heat for about 30 seconds.
  6. Mix cooked pasta, roasted vegetables, bacon, parmesan cheese, and thyme in the skillet, tossing gently.
  7. Incorporate lemon juice and gradually add reserved pasta water to reach desired sauce consistency.
  8. Serve hot, garnished with extra parmesan.
