Equipment

  • Large pot

Method

Instructions
  1. Cook the Fettuccine: Begin by boiling water in a large pot and cook the fettuccine pasta according to the package instructions. Drain and set aside, allowing it to rest while you prepare the sauce.
  2. Sauté the Sausage: In a large skillet, pour in the olive oil and heat it over medium heat. Add the sliced andouille sausage and cook until it's beautifully browned, releasing its smoky flavors.
  3. Add Vegetables: Toss in the sliced onion, red bell pepper, and chopped garlic into the skillet. Sauté these vibrant veggies until they soften and become fragrant, about 3-5 minutes.
  4. Season the Mixture: Sprinkle in the Cajun seasoning, dried oregano, and brown sugar. Mix everything together to ensure the spices coat the vegetables and sausage evenly.
  5. Simmer the Sauce: Pour in the crushed tomatoes and chicken broth, stirring to combine. Bring the mixture to a gentle simmer, letting all the flavors meld together for about 5 minutes.
  6. Creamy Consistency: Slowly incorporate the heavy cream into the skillet. Stir well and allow the sauce to thicken slightly, becoming luxuriously creamy.
  7. Cook the Shrimp: Add the prepared shrimp, cooking them until they turn a lovely pink color, about 3-5 minutes. Ensure they’re evenly coated with the sauce.
  8. Combine with Pasta: Gently toss the drained fettuccine into the skillet, ensuring it’s well mixed with the shrimp and sauce. Allow everything to warm through for another 2-3 minutes.
  9. Serve: Plate your Cajun shrimp and sausage pasta, and top with freshly grated Parmesan and a sprinkle of chopped parsley for that final touch.
