How to Make Cheater’s Mini Strawberry-Vanilla Galettes
- Preheat your oven to the temperature specified for puff pastry, usually around 400°F.
- Combine the hulled and halved strawberries in a mixing bowl with granulated sugar, cornstarch, and vanilla paste. Stir gently until the strawberries are well-coated.
- Roll out the thawed puff pastry sheets on a lightly floured surface. Cut them into circles or squares as desired.
- Spoon the sweet strawberry mixture into the center of each pastry piece, leaving about an inch around the edges to fold.
- Brush the edges of the pastry with the whisked egg.
- Sprinkle Demerara sugar generously over the edges of the galettes.
