  • 2 cups self-raising flour substitute with all-purpose flour plus 3 tsp of baking powder
  • 0.5 cup fresh chives can swap with parsley or your favorite herbs
  • 1 tablespoon baking powder check for freshness
  • 1 teaspoon salt adjust based on cream cheese saltiness
  • 0.5 teaspoon black pepper omit for milder flavors
  • 100 grams cold butter use cold butter for flakiness
  • 125 grams mature cheddar cheese substitute with any favorite cheese
  • 100 grams cream cheese with garlic and herbs plain cream cheese can work
  • 125 ml milk/yogurt/buttermilk use what you have on hand
For Topping
  • 0.5 cup extra cheddar cheese for an irresistible cheesy crust

Method
 

Preparation
  1. Preheat oven to 200°C (180°C Fan/Gas 6) and prepare a baking tray.
  2. In a large bowl, combine flour, chives, baking powder, salt, and pepper. Stir until even.
  3. Grate cold butter into dry ingredients and mix until crumbs form.
  4. Add cheddar and cream cheese, mixing until a rough dough forms.
  5. Pour in milk, stirring until dough comes together. Add more liquid if needed.
  6. Turn dough onto floured surface and lightly knead. Roll into a square about 2.5 cm thick.
  7. Cut into 12 equal pieces and place on the baking tray.
  8. Brush tops with remaining liquid and sprinkle with extra cheddar. Bake for 13-18 minutes until golden.
  9. Transfer to a wire rack to cool slightly before serving.
