How to Make Cheesy Ground Beef and Rice Casserole
- Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish.
- In a skillet over medium heat, brown the lean ground beef with diced onion, draining any excess fat once cooked.
- Stir in minced garlic and cook for about 30 seconds until fragrant.
- In a separate bowl, whisk together the cream of mushroom soup with your choice of milk or beef broth, paprika, salt, and pepper until smooth.
- In the prepared baking dish, mix the cooked rice, beef mixture, and half the shredded cheese. Pour the sauce over and stir gently to combine.
- Sprinkle the remaining cheese over the casserole. Cover with foil and bake for 20 minutes.
- Uncover and bake for another 10 minutes until cheese is bubbly and golden; optionally broil for an extra crispy topping.
- Let it cool slightly, then garnish with chopped parsley if desired.
