  • 6 tablespoons Unsalted Butter cold, grated
  • 1/2 cup Plain Whole Milk Yogurt or dairy-free substitute

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. Combine the dry ingredients by mixing flour, cornmeal, baking powder, and sea salt in a bowl.
  3. Grate cold butter into the dry mix and rub it in until the mixture resembles coarse crumbs.
  4. Fold in yogurt until the dough begins to form.
  5. Turn the dough onto a floured surface, shape it into an oval, and cut it into 8 pieces.
  6. Prepare the fruit filling by combining cherries, peaches, sugar, lemon zest, lemon juice, cornstarch, ginger, cinnamon, and salt in a baking dish.
  7. Top the fruit with your biscuit pieces evenly.
  8. Bake for 40-45 minutes until golden brown and bubbly.
  9. Cool for about 1 hour before serving or enjoy warm.
