How to Make Chicken Cordon Bleu Meatloaf
- Preheat your oven to 375°F (190°C) and grease or line a loaf pan with parchment paper.
- In a large bowl, combine ground chicken, breadcrumbs, eggs, milk, garlic powder, onion powder, Dijon mustard, salt, pepper, paprika, and parsley. Mix until just combined.
- Press half of the meat mixture into the bottom of the prepared loaf pan. Layer the ham and Swiss cheese over this, then cover with remaining meat mixture.
- Spread the Dijon-mayo mixture over the top and sprinkle with shredded Swiss cheese before the last 5 minutes of baking.
- Bake for 45-55 minutes, or until internal temperature reaches 165°F (74°C).
- Let the meatloaf rest for about 10 minutes before slicing. Serve with your favorite roasted veggies or salad.
