How to Make Chicken Cordon Bleu Meatloaf
  1. Preheat your oven to 375°F (190°C) and grease or line a loaf pan with parchment paper.
  2. In a large bowl, combine ground chicken, breadcrumbs, eggs, milk, garlic powder, onion powder, Dijon mustard, salt, pepper, paprika, and parsley. Mix until just combined.
  3. Press half of the meat mixture into the bottom of the prepared loaf pan. Layer the ham and Swiss cheese over this, then cover with remaining meat mixture.
  4. Spread the Dijon-mayo mixture over the top and sprinkle with shredded Swiss cheese before the last 5 minutes of baking.
  5. Bake for 45-55 minutes, or until internal temperature reaches 165°F (74°C).
  6. Let the meatloaf rest for about 10 minutes before slicing. Serve with your favorite roasted veggies or salad.
