Ingredients
  

For the Salad
  • 1 can chickpeas drained and rinsed
  • 2 medium avocados ripe but firm, diced
  • 1 cup feta cheese crumbled
  • 1/2 small red onion thinly sliced
  • 1/4 cup fresh parsley chopped
  • 1/4 cup fresh mint chopped
For the Dressing
  • 3 tablespoons olive oil extra virgin recommended
  • 2 tablespoons lemon juice freshly squeezed
  • 1 clove garlic minced
  • 1 teaspoon dried oregano
  • to taste salt
  • to taste pepper

Method
 

  1. Drain and rinse the chickpeas under cold water for about 30 seconds.
  2. In a large bowl, combine the rinsed chickpeas, diced avocado, crumbled feta cheese, thinly sliced red onion, chopped parsley, and fresh mint. Mix everything gently.
  3. In a small bowl, whisk together the olive oil, freshly squeezed lemon juice, minced garlic, and dried oregano. Season with a pinch of salt and pepper.
  4. Pour the dressing over the salad ingredients and gently toss until well coated.
  5. Serve immediately or chill in the refrigerator for about 15 minutes before serving.
