Preparation
- Preheat your oven to 350°F (175°C) and prepare a loaf pan by greasing it or lining with parchment paper.
- In a large mixing bowl, combine 3 overripe mashed bananas, 4 tablespoons melted vegan butter, ¾ cup maple syrup, 1 cup almond or oat milk, and 1 teaspoon vanilla extract. Whisk until well blended.
- In a separate bowl, mix together 1½ teaspoons baking powder, 1 teaspoon baking soda, 1 teaspoon cinnamon, ¼ teaspoon salt, 1½ cups flour, and 1 cup rolled oats; stir gently until just combined.
- Pour half of the batter into the prepared loaf pan, spreading it evenly across the bottom.
- In a small bowl, mix 4 tablespoons melted vegan butter, ⅓ cup light brown sugar, and 2 tablespoons cinnamon. Dollop half of this mixture over the batter and swirl gently.
- Carefully pour remaining batter on top of the cinnamon swirl and finish with the rest of the swirl mixture, swirling again gently.
- Bake for 50-60 minutes. Check doneness with a toothpick.
- Let the loaf cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
- In a small bowl, combine ¾ cup powdered sugar, 2 tablespoons melted vegan butter, and 2 ounces softened vegan cream cheese. Mix until smooth.
- Slice your Cinnamon Roll Banana Bread and serve it warm or at room temperature.
