Preparation
  1. Preheat your oven to 350°F (175°C) and prepare a loaf pan by greasing it or lining with parchment paper.
  2. In a large mixing bowl, combine 3 overripe mashed bananas, 4 tablespoons melted vegan butter, ¾ cup maple syrup, 1 cup almond or oat milk, and 1 teaspoon vanilla extract. Whisk until well blended.
  3. In a separate bowl, mix together 1½ teaspoons baking powder, 1 teaspoon baking soda, 1 teaspoon cinnamon, ¼ teaspoon salt, 1½ cups flour, and 1 cup rolled oats; stir gently until just combined.
  4. Pour half of the batter into the prepared loaf pan, spreading it evenly across the bottom.
  5. In a small bowl, mix 4 tablespoons melted vegan butter, ⅓ cup light brown sugar, and 2 tablespoons cinnamon. Dollop half of this mixture over the batter and swirl gently.
  6. Carefully pour remaining batter on top of the cinnamon swirl and finish with the rest of the swirl mixture, swirling again gently.
  7. Bake for 50-60 minutes. Check doneness with a toothpick.
  8. Let the loaf cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
  9. In a small bowl, combine ¾ cup powdered sugar, 2 tablespoons melted vegan butter, and 2 ounces softened vegan cream cheese. Mix until smooth.
  10. Slice your Cinnamon Roll Banana Bread and serve it warm or at room temperature.
