Preparation
- Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- Combine the mashed ripe bananas, melted butter, sugar, beaten egg, and vanilla in a bowl.
- Whisk together the flour, baking soda, and salt in another bowl. Gradually mix into the banana mixture.
- Mix the ground cinnamon and brown sugar in a small bowl.
- Layer half of the batter in the pan, sprinkle half of the cinnamon mixture, add the rest of the batter, and top with the remaining cinnamon mixture.
- Gently swirl the cinnamon through the batter using a knife.
- Bake for 60-70 minutes until a toothpick comes out clean. Tent with foil if browning too quickly.
- Cool the bread in the pan for 10 minutes, then transfer it to a wire rack.
