  • 3 tablespoons Rice Wine Vinegar
Vegetables
  • 0.5 cups Mushrooms, sliced white button, shiitake, or cremini
  • 2 pieces Green Onions, sliced can substitute with chives
Spice
  • 1 tablespoon Sriracha Sauce adjust to taste or substitute with chili paste
  • 1 teaspoon Ground White Pepper black pepper is a good alternative
Thickening
  • 3 tablespoons Corn Starch or arrowroot for a corn-free choice
  • 3 tablespoons Cold Water to create a slurry
Protein
  • 6 ounces Extra-Firm Tofu, sliced can replace with chicken, pork, or beef
  • 2 pieces Eggs, well beaten omit for a vegan version

Method
 

Basic Steps
  1. In a large saucepan, bring the reduced-sodium chicken broth to a gentle simmer over medium-high heat.
  2. Add sliced mushrooms, low-sodium soy sauce, rice wine vinegar, Sriracha, and ground white pepper. Cook for about 5 minutes.
  3. In a small bowl, mix corn starch with cold water to form a slurry. Gradually stir this into the soup and simmer until it thickens slightly.
  4. Drizzle in the beaten eggs while gently stirring the soup.
  5. Add sliced tofu and green onions, stirring gently to combine. Remove from heat and serve hot.
