  • 1 cup Soy Sauce
  • 2 tablespoons Sweet Chili Sauce
  • 1 tablespoon Sesame Oil
  • 3 tablespoons Peanut Butter or almond/cashew butter
  • 2 tablespoons Seasoned Rice Wine Vinegar
  • 1 tablespoon Crispy Chili Oil adjust to spice preference
  • 2 cloves Garlic minced
  • 1 lime Lime freshly juiced
For the Salad
  • 8 ounces Preferred Noodle linguine or rice noodles
  • 1 large Red Bell Pepper finely chopped
  • 1 cup Shredded Carrots
  • 1/2 cup Cilantro chopped
  • 2 stalks Green Onion sliced
  • 1/2 medium Red Onion finely chopped

Method
 

Preparation
  1. Prepare the sauce: In a medium bowl, whisk together the soy sauce, sweet chili sauce, sesame oil, peanut butter, seasoned rice wine vinegar, crispy chili oil, minced garlic, and fresh lime juice until smooth and well combined.
  2. Cook the noodles: Bring a pot of water to a boil and cook your preferred noodles according to the package instructions. Drain them and give them a quick rinse under cold water to stop the cooking process.
  3. Mix the salad: In a large mixing bowl, combine the cooled noodles with the finely chopped red bell pepper, shredded carrots, cilantro, green onion, and red onion. Stir gently until everything is evenly distributed.
  4. Combine and serve: Pour the prepared sesame peanut sauce over the noodle salad and toss everything together until the noodles are generously coated with the delicious sauce.
