  • 1 cup Tofu cubed

  • 1 large Beaten Egg whisk until pale
For Thickening and Spice
  • 2 tablespoons Cornstarch make a slurry with water
  • 1 tablespoon Chili Paste adjust to taste

How to Make Chinese-Style Hot and Sour Soup
  1. In a large pot, bring the chicken broth to a rolling boil.
  2. Add the sliced mushrooms, bamboo shoots, and cubed tofu to the pot; allow to simmer for about 5 minutes.
  3. Stir in the soy sauce, rice vinegar, and chili paste.
  4. Mix cornstarch with a small amount of water to create a slurry. Add it to the soup, stirring continuously.
  5. Slowly pour the beaten egg into the soup while stirring gently to create ribbons.
  6. Sprinkle the chopped green onions over the soup just before serving and ladle into bowls.
