How to Make Calabaza en Tacha
  1. In a large stock pot, mix together 6 cups of water, piloncillo, cinnamon sticks, star anise, whole cloves, orange zest, and juice. Bring it to a boil, stirring until the sugar dissolves completely.
  2. Carefully add the pumpkin pieces into the boiling syrup. Cover the pot, then reduce heat and let it simmer for about an hour until the pumpkin is tender and syrup thickens.
  3. Once softened, gently transfer the pumpkin pieces into a serving bowl and generously drizzle with the aromatic syrup.
  4. Optional: Sprinkle with chopped nuts before serving.
