Preparation
- Begin by mincing fresh garlic and squeezing the juice from your lemons.
- Heat a drizzle of olive oil over medium-high heat in a skillet.
- Season the boneless chicken breasts with salt and pepper, then sear until golden brown on both sides, about 4-5 minutes per side.
- Layer the beautifully seared chicken in the crockpot. Sprinkle the minced garlic and capers on top.
- Pour the low-sodium chicken broth and freshly squeezed lemon juice over everything.
- Generously sprinkle Italian seasoning over the top. Cover the crockpot and set to low for 6 hours or high for 3 hours.
- Once cooked, carefully remove the chicken. Whisk in butter with remaining juices until smooth.
- Place chicken over cooked pasta or rice. Garnish with freshly chopped parsley.
