How to Make Pumpkin Chicken Chili
  1. Chop the onions and peppers. If preferred, sauté them in olive oil before adding to the crockpot.
  2. Place the chicken breasts at the bottom of the crockpot. Layer in the pumpkin, onions, peppers, spices, and broth.
  3. Cover the crockpot and cook on low for 6 hours.
  4. Use two forks to shred the chicken right in the pot.
