How to Make Pumpkin Chicken Chili
- Chop the onions and peppers. If preferred, sauté them in olive oil before adding to the crockpot.
- Place the chicken breasts at the bottom of the crockpot. Layer in the pumpkin, onions, peppers, spices, and broth.
- Cover the crockpot and cook on low for 6 hours.
- Use two forks to shred the chicken right in the pot.
- Allow the chili to sit for 10-20 minutes after shredding to thicken.
- Spoon the chili into bowls and garnish with sliced avocado or guacamole.
