Preparation
- Preheat the oven to 375°F (190°C).
- Season the pork chops with salt, black pepper, garlic powder, and onion powder, then brown them in olive oil for about 3-4 minutes per side until golden. Set aside to rest.
- Melt butter in the same skillet, then sauté the sliced onion until translucent, about 5 minutes.
- Mix in flour, stirring for 2 minutes. Gradually whisk in milk and chicken broth until thickened, around 5 minutes.
- Add thyme, paprika, and 1 cup of shredded cheddar cheese into the skillet until melted.
- Layer half of the sliced potatoes in a greased baking dish, pour half of the cheese sauce on top, place the pork chops, then the remaining potatoes and sauce.
- Cover the casserole with foil and bake for 45 minutes. Remove foil and bake for an additional 15 minutes until potatoes are tender and top is golden brown.
- Rest for 10 minutes after taking out of the oven, garnish with fresh parsley if desired.
