Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. Season the pork chops with salt, black pepper, garlic powder, and onion powder, then brown them in olive oil for about 3-4 minutes per side until golden. Set aside to rest.
  3. Melt butter in the same skillet, then sauté the sliced onion until translucent, about 5 minutes.
  4. Mix in flour, stirring for 2 minutes. Gradually whisk in milk and chicken broth until thickened, around 5 minutes.
  5. Add thyme, paprika, and 1 cup of shredded cheddar cheese into the skillet until melted.
  6. Layer half of the sliced potatoes in a greased baking dish, pour half of the cheese sauce on top, place the pork chops, then the remaining potatoes and sauce.
  7. Cover the casserole with foil and bake for 45 minutes. Remove foil and bake for an additional 15 minutes until potatoes are tender and top is golden brown.
  8. Rest for 10 minutes after taking out of the oven, garnish with fresh parsley if desired.
