Preparation
- Preheat the oven to 375°F (190°C) and grease a 9x13-inch baking dish.
- Slice the sweet potatoes into thin rounds, about 1/8 inch thick.
- Combine heavy cream, salt, pepper, and chopped thyme in a medium saucepan. Warm over medium heat until heated through.
- Layer half of the sweet potato slices in the greased baking dish, followed by half the cranberries and half the cheese.
- Repeat the layering process with the remaining sweet potatoes, cranberries, and cheese.
- Top the gratin with panko breadcrumbs and drizzle melted butter over everything.
- Bake for 45 minutes, or until the top is golden brown and bubbling.
