  • 2 pounds sweet potatoes firm, unblemished
  • 2 cups cranberries fresh or frozen
  • 1 cup heavy cream or half-and-half for lighter option
  • 1 cup cheddar cheese or Gruyère for extra flavor
  • to taste teaspoon salt
  • to taste teaspoon pepper
  • 2 tablespoons fresh thyme or substitute with rosemary
For the Topping
  • 1 cup panko breadcrumbs
  • 3 tablespoons butter melted

Preparation
  1. Preheat the oven to 375°F (190°C) and grease a 9x13-inch baking dish.
  2. Slice the sweet potatoes into thin rounds, about 1/8 inch thick.
  3. Combine heavy cream, salt, pepper, and chopped thyme in a medium saucepan. Warm over medium heat until heated through.
  4. Layer half of the sweet potato slices in the greased baking dish, followed by half the cranberries and half the cheese.
  5. Repeat the layering process with the remaining sweet potatoes, cranberries, and cheese.
  6. Top the gratin with panko breadcrumbs and drizzle melted butter over everything.
  7. Bake for 45 minutes, or until the top is golden brown and bubbling.
