How to Make Cranberry Bliss Coffee Cake
- Preheat your oven to 350°F (175°C) and generously grease a 9x13-inch baking pan.
- In a large mixing bowl, beat together softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
- Add in the eggs one at a time, mixing well after each addition. Blend in the vanilla extract.
- In a separate bowl, whisk together the flour, baking powder, and a pinch of salt. Gradually add the dry mixture into the wet ingredients while mixing until just combined.
- Gently fold the cranberries into the batter, being careful not to overmix.
- Spread the batter evenly in the prepared pan, then bake for 30-35 minutes, or until golden brown and a toothpick inserted comes out clean.
- While the cake is cooling, beat the cream cheese until smooth. Gradually add in powdered sugar and milk until the desired creamy consistency is reached.
- Once the cake has completely cooled, frost it with the cream cheese mixture.
