Ingredients

For the Cake
  • 2 cups All-Purpose Flour Substitute with gluten-free flour for a gluten-free option.
  • 2 cups Cranberries Fresh or dried; use frozen cranberries tossed in flour if fresh ones are not available.
  • 1 cup Granulated Sugar Avoid substitutes as they may affect the texture.
  • 2 teaspoons Baking Powder Do not omit or replace it.
  • 1 cup Unsalted Butter Ensure it's softened for easy mixing; vegetable oil can be used for a dairy-free version.

  • 3 tablespoons Milk Any plant-based milk works for a dairy-free option.

Method

How to Make Cranberry Bliss Coffee Cake
  1. Preheat your oven to 350°F (175°C) and generously grease a 9x13-inch baking pan.
  2. In a large mixing bowl, beat together softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
  3. Add in the eggs one at a time, mixing well after each addition. Blend in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking powder, and a pinch of salt. Gradually add the dry mixture into the wet ingredients while mixing until just combined.
  5. Gently fold the cranberries into the batter, being careful not to overmix.
  6. Spread the batter evenly in the prepared pan, then bake for 30-35 minutes, or until golden brown and a toothpick inserted comes out clean.
  7. While the cake is cooling, beat the cream cheese until smooth. Gradually add in powdered sugar and milk until the desired creamy consistency is reached.
  8. Once the cake has completely cooled, frost it with the cream cheese mixture.
