- In a mixing bowl, combine the fresh cranberries and shelled pistachios.
- In another bowl, blend the goat cheese and cream cheese until smooth. Add honey, ground ginger, ground cinnamon, salt, dried thyme, dried rosemary, and pepper, mixing until well incorporated.
- Carefully fold the prepared Cranberry Pistachio Coating mixture into the cheese blend.
- Shape the combined mixture into a log. Wrap it in plastic wrap and refrigerate until firm, about 2 hours.
