  • 1 cup Shelled roasted, salted pistachios
  • 8 oz Goat cheese log or tub
  • 8 oz Cream cheese at room temperature
  • 1 tbsp Honey
For the Spices
  • 1 tsp Ground ginger
  • 1 tsp Ground cinnamon
  • 1/2 tsp Salt
  • 1 tsp Dried thyme
  • 1 tsp Dried rosemary
  • 1/2 tsp Pepper
For the Coating
  • 1 cup Cranberry Pistachio Coating mixture finely chopped mixture of cranberries and pistachios

Method
 

Preparation Steps
  1. In a mixing bowl, combine the fresh cranberries and shelled pistachios.
  2. In another bowl, blend the goat cheese and cream cheese until smooth. Add honey, ground ginger, ground cinnamon, salt, dried thyme, dried rosemary, and pepper, mixing until well incorporated.
  3. Carefully fold the prepared Cranberry Pistachio Coating mixture into the cheese blend.
  4. Shape the combined mixture into a log. Wrap it in plastic wrap and refrigerate until firm, about 2 hours.
