  • 1000 g Cauliflower florets About 1 large or 1.5 medium cauliflower heads.
  • 2 tbsp Extra Virgin Olive Oil Any neutral oil can be used.

  • 1 tsp Black Pepper Freshly ground is recommended.
  • 50 g Unsalted Butter Use salted butter if preferred.
  • 50 g Plain/All-Purpose Flour No substitutions recommended.
  • 500 ml Milk Whole milk yields a better texture.
  • 200 ml Cream Can replace with more milk for a lighter version.
  • 1 tsp Cooking Salt Adjust according to taste.
  • 1 tsp Nutmeg Powder Freshly grated will impart better flavor.
  • 200 g Red Leicester Cheese Can substitute with Cheddar cheese.
  • 200 g Gruyère Cheese Other melting cheeses like Swiss can be used.
  • Topping Cheeses (Red Leicester & Gruyère) Equal blend of cheeses for a rich topping.

Method
 

Preparation Steps
  1. Preheat your oven to 220°C (430°F) to prepare for roasting the cauliflower.
  2. Cut the cauliflower into bite-sized florets and toss with olive oil, salt, and pepper.
  3. Spread the florets on a baking tray and roast for about 20 minutes until slightly browned.
  4. Reduce the oven temperature to 180°C (350°F) for baking the assembled dish.
  5. In a saucepan, gently heat the milk and cream until hot, but do not boil.
  6. Melt the unsalted butter in a saucepan, stir in the flour, and cook for about 3 minutes.
  7. Gradually whisk in the heated milk, stirring until the sauce thickens.
  8. Remove from heat and stir in the grated cheeses, nutmeg, and cooking salt.
  9. Toss the roasted cauliflower with the cheese sauce until well-coated.
  10. Transfer to a baking dish, top with remaining cheese, and bake for about 30 minutes.
  11. Allow the dish to cool for about 5 minutes before serving.
