For the Pasta Base
  • 8 ounces Ziti Pasta Cook to al dente
For the Creamy Dressing
  • 1 cup Mayonnaise Adjust for desired consistency
  • 1 cup Sour Cream Consider using Mexican Crema
  • 1 tablespoon White Sugar Balances flavors
For the Vegetables
  • 1 cup Red Bell Pepper Finely diced
  • 1 small Red Onion Very finely chopped
  • 1 medium Carrot Grated
  • 1 cup Celery Finely diced
  • 1 teaspoon Celery Salt Adjust to taste
  • 1 teaspoon Celery Seed Use sparingly
  • 1 small Diced Pimientos Enhances flavor and color
For the Cheese
  • 1 cup Cheddar Cheese Finely diced

Method
 

Instructions
  1. Cook the ziti pasta according to package instructions until al dente, usually around 8-10 minutes. Rinse with cold water and drain well.
  2. Finely dice the red onion, bell pepper, and celery. Mix with celery salt and celery seed in a large bowl.
  3. Grate the carrot and add to the veggie mix.
  4. In a separate bowl, whisk together sour cream, mayonnaise, and white sugar until smooth.
  5. If using fresh parsley, mince it and add it to the vegetable mix.
  6. Let the vegetable mixture rest for approximately 15 minutes.
  7. Mix the vegetable blend with the creamy dressing, then fold in the cooked ziti pasta.
  8. Finely dice the cheddar cheese and fold it into the salad.
  9. Cover and chill for at least 4 to 6 hours or ideally overnight.
