Preparation and Cooking
- Boil a large pot of water seasoned with 1½ tablespoons of salt. Halve the cherry tomatoes.
- Add spaghetti to boiling water and cook according to package instructions for al dente.
- In a skillet, heat 2 tablespoons of extra virgin olive oil over medium-high heat. Add halved tomatoes, salt, pepper, garlic, and optional red pepper flakes. Cook for 10 minutes.
- Reserve 1 cup of pasta water before draining. Toss cooked spaghetti into the skillet with tomatoes, adding ½ cup of reserved water and fresh basil.
- Remove from heat, stir in ½ cup of grated parmesan until melted.
- Plate immediately, garnishing with fresh basil and a drizzle of olive oil. Add optional burrata if desired.
