For the Sauce
  • 2 pounds Cherry Tomatoes Halved; fresh or canned versions.
  • 2 tablespoons Extra Virgin Olive Oil For sautéing the tomatoes.
  • 1 clove Garlic Pressed or grated; always use fresh.
  • 1 teaspoon Salt Vital for flavor.
  • 1.5 tablespoons Salt For pasta water.
  • 2 twists Black Pepper Adjust based on taste.
  • 0.33 teaspoon Red Pepper Flakes Optional for heat.
  • 15 leaves Fresh Basil Leaves Avoid dried herbs.
  • 0.5 cup Parmesan Cheese Grated; can substitute for pecorino romano or vegan cheese.
  • 1-2 Burrata or Mozzarella Balls Optional topping for richness.

Method
 

Preparation and Cooking
  1. Boil a large pot of water seasoned with 1½ tablespoons of salt. Halve the cherry tomatoes.
  2. Add spaghetti to boiling water and cook according to package instructions for al dente.
  3. In a skillet, heat 2 tablespoons of extra virgin olive oil over medium-high heat. Add halved tomatoes, salt, pepper, garlic, and optional red pepper flakes. Cook for 10 minutes.
  4. Reserve 1 cup of pasta water before draining. Toss cooked spaghetti into the skillet with tomatoes, adding ½ cup of reserved water and fresh basil.
  5. Remove from heat, stir in ½ cup of grated parmesan until melted.
  6. Plate immediately, garnishing with fresh basil and a drizzle of olive oil. Add optional burrata if desired.
