Preparation Steps
  1. Preheat the oven to 400°F (200°C).
  2. Cook chopped bacon in a large cold skillet on medium heat until crispy; transfer to paper towels.
  3. Sear chicken thighs in the bacon fat until browned, about 5-7 minutes.
  4. Sauté sliced mushrooms in the same skillet until browned, about 4-5 minutes.
  5. Melt butter in the skillet, add minced garlic and cook for 30 seconds.
  6. Whisk in flour for about 3 minutes until it forms a roux.
  7. Slowly pour in chicken stock and heavy cream, whisking until smooth.
  8. Reintroduce bacon, chicken, and mushrooms to the skillet, let simmer to thicken.
  9. Pour the filling into a baking dish, cover with puff pastry, and brush with egg wash.
  10. Bake for 20-25 minutes until pastry is golden and filling is bubbling.
  11. Let it set for about 5 minutes before serving.
