Ingredients
  

For the Casserole
  • 2 cups Minute Rice Quick-cooking rice
  • 1 can Cream of Mushroom Soup Can substitute with cream of chicken
  • 1 can Cream of Chicken Soup
  • 1 can Water Use a soup can for measurement
  • 1 package Lipton Onion Soup Mix Can substitute with homemade onion mix
  • 1 tablespoon Butter Can substitute with olive oil
  • 4 pieces Chicken Breasts Boneless and skinless

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish with 1 tablespoon of butter.
  2. Mix together 2 cups of uncooked Minute rice, both cans of cream of mushroom and cream of chicken soups, and one can of water in a medium bowl until well combined.
  3. Spread the rice mixture evenly into the prepared baking dish.
  4. Layer the chicken breasts on top of the rice mixture. Sprinkle the Lipton onion soup mix over the chicken.
  5. Cover the dish tightly with aluminum foil. Bake for 1 to 1½ hours, or until the chicken is fully cooked and the rice is tender.
  6. Serve it up! Optionally cut the chicken into pieces and mix it into the rice prior to serving.
