Soup Preparation
- In a large pot, combine broccoli, chicken stock, water, smashed garlic, salt, and black pepper. Bring to a boil.
- Reduce heat, cover, and simmer for 30 minutes.
- Mash the broccoli to desired texture, leaving some chunks.
- Stir in the cooked pasta and cook uncovered for another 15 minutes.
- Add ground nutmeg if using, and adjust seasoning.
- Ladle soup into bowls and top with Parmesan cheese, olive oil, and extra pepper.
