  • 4 cups Chicken Stock Substitute with vegetable stock for a vegetarian option.
  • 2 cups Water Adjust for desired thickness.
  • 4 cloves Garlic, smashed Use fresh for deeper flavor.
  • 1 teaspoon Kosher Salt Adjust to taste.
  • 1 teaspoon Black Pepper, freshly ground
  • 1/4 teaspoon Ground Nutmeg (optional) Can be omitted.
For the Pasta
  • 1 cup Orzo or Ditalini Pasta Cook separately.
For Serving
  • 1/2 cup Parmesan Cheese, finely grated
  • 2 tablespoons Extra Virgin Olive Oil Drizzle before serving.

Method
 

Soup Preparation
  1. In a large pot, combine broccoli, chicken stock, water, smashed garlic, salt, and black pepper. Bring to a boil.
  2. Reduce heat, cover, and simmer for 30 minutes.
  3. Mash the broccoli to desired texture, leaving some chunks.
  4. Stir in the cooked pasta and cook uncovered for another 15 minutes.
  5. Add ground nutmeg if using, and adjust seasoning.
  6. Ladle soup into bowls and top with Parmesan cheese, olive oil, and extra pepper.
