  • 8 oz Elbow Macaroni or other pasta shapes like shells or cavatappi
For the Cheese Sauce
  • 2 cups Sharp Cheddar or a mix of medium and sharp
  • 1 cup Gruyère or Swiss cheese
  • 2 cups Milk whole milk or half-and-half
  • 4 tbsp Butter unsalted
  • 2 tbsp All-Purpose Flour or gluten-free blend
  • 1 tsp Mustard Powder or Dijon mustard
For Topping (Optional)
  • 1 cup Breadcrumbs or panko
  • 1/2 cup Parmesan Cheese or extra cheddar

Method
 

Preparation
  1. Preheat your oven to 350°F.
  2. Boil a large pot of water, adding one teaspoon of salt. Cook the elbow macaroni for about 6.5 minutes until slightly undercooked. Drain well.
  3. Combine the drained macaroni with butter in a baking dish. Mix until the butter has melted and lightly coats the pasta.
  4. Pour in the evaporated milk and crack in the eggs. Season with remaining salt and pepper, mixing thoroughly.
  5. Add your cheese chunks, stirring gently until combined and melted within the mixture.
  6. Bake for 20 minutes, stir, and continue baking for an additional 25 minutes until golden crust forms.
  7. Optional: Sprinkle paprika on top before baking.
