How to Make Philadelphia Cheesecake Bars
- Preheat Oven: Start by preheating your oven to 350°F (175°C).
- Prepare the Pan: Line an 8x8 or 9x9-inch baking pan with parchment paper and lightly spray it with baking spray.
- Mix the Crust: In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Stir until well combined, then firmly press the mixture into the bottom of the prepared pan to form a solid crust.
- Combine Filling Ingredients: In a large bowl, beat together the softened cream cheese, granulated sugar, sour cream, and vanilla extract until smooth.
- Add Eggs: Slowly add the room temperature eggs to the mixture. Mix on low speed until just combined.
- Bake: Pour the cheesecake filling over the prepared crust and spread it evenly. Bake for 25-35 minutes, until the center is slightly jiggly but set.
- Make Strawberry Topping: In a saucepan, combine chopped strawberries, sugar, water, lemon juice, and cornstarch. Cook over medium heat for about 15 minutes until thickened. Let cool.
