Ingredients
  

For the Chowder Base
  • 1 lb Sausages Choose your favorite type; pork, smoked, or spicy.
  • 1 medium Onion Chopped.
  • 2 stalks Celery Diced.
  • 2 medium Carrots Sliced.
  • 3 cloves Garlic Minced.
  • 1 tsp Dried Thyme
For Thickening and Flavor
  • 1 tbsp Flour Use all-purpose or corn flour for gluten-free.
  • 4 cups Chicken or Vegetable Stock
  • 2 leaves Bay Leaves Remove before serving.
  • 1 cup Wild Rice Brown rice or pearl barley are alternatives.
For the Star Ingredients
  • 4 medium Potatoes Diced; russets for creaminess.
  • 1 cup Single/Light Cream or Half and Half
  • 1 tsp Salt Adjust to taste.

Method
 

Instructions
  1. Heat a tablespoon of olive oil in a large soup pot over medium heat until shimmering.
  2. Remove the sausage from its casing and crumble into the pot. Cook for about 5-7 minutes until browned, then set aside.
  3. Add chopped onion, diced celery, and sliced carrots to the same pot. Sauté on low heat for about 10 minutes until tender.
  4. Stir in minced garlic and dried thyme, cooking for another 30 seconds until fragrant.
  5. Sprinkle flour over the veggies and mix well to form a roux, cooking for 2 minutes.
  6. Gradually pour in stock, add bay leaves and wild rice, and bring to a gentle simmer for about 30 minutes.
  7. Fold in diced potatoes and cook for another 15 minutes until tender.
  8. Stir in the cream, season with salt and pepper, and warm through before serving hot.
