Ingredients

For the Soup Base
  • 1 bunch Fresh Dill Chopped
  • 4 cups Potatoes Diced, starchy variety like Russet or Yukon Gold
  • 4 cups Homemade Stock Or vegetable stock for vegetarian version
  • 1 cup Cream Can swap for half-and-half or omit for dairy-free
  • to taste Salt
  • to taste Pepper
Optional Add-In
  • 1 medium Sautéed Onions Finely chopped
  • 1 tablespoon Lemon Juice Squeezed at the end
Serving Accompaniments
  • 1 loaf Crusty Bread For dipping
  • 1 serving Light Salad As a side

Equipment

  • large heavy-bottomed pot
  • Immersion blender

Method

Cooking Steps
  1. In a large heavy-bottomed pot, heat a drizzle of oil over medium heat. Add finely chopped onions and sauté until they become translucent, around 3-4 minutes.
  2. Toss in diced potatoes and let them cook for a few minutes, stirring occasionally, until they begin to soften, about 5 minutes.
  3. Pour in your homemade or store-bought stock, stirring well. Bring the mixture to a boil before reducing heat to a simmer, cooking until the potatoes are tender (approximately 15 minutes).
  4. Stir in the chopped fresh dill along with the cream, allowing the soup to cook for an additional 5 minutes to meld the flavors beautifully.
  5. Using an immersion blender, blend the soup to your desired consistency—smooth and creamy or with some hearty chunks of potato for texture.
  6. Taste the soup and season with salt and pepper as needed. Serve hot, ladled into bowls, and enjoy the warmth!
