  • 2 cups Frozen Cheese Tortellini Substitute with fresh tortellini for better texture.
  • 2 cans Tomato Soup 10.75 ounces each, opt for condensed.
  • 2 cups Chicken Broth Vegetable broth for a vegetarian option.
  • 2 cups Milk Skim preferred, whole or oat milk for richer flavor.
  • 2 cups Half and Half Heavy cream can be used instead.
  • 1/2 cup Sun Dried Tomatoes Optional, but adds sweet and tangy flavor.
  • 1 tsp Onion Powder Can substitute with fresh onions.
  • 1 tsp Garlic Powder Fresh minced garlic works well too.
  • 1 tsp Dried Basil Fresh basil can be used for more flavor.
  • 1/2 tsp Salt Adjust according to taste.
  • 1/2 cup Shredded Parmesan Cheese Nutritional yeast as a dairy-free alternative.

How to Make Tomato Tortellini Soup
  1. Boil a pot of water and cook the frozen cheese tortellini according to the package directions until al dente, usually about 3-5 minutes. Drain and set aside.
  2. In a large stock pot, mix together the tomato soup, chicken broth, milk, half and half, sun dried tomatoes, onion powder, garlic powder, basil, and salt. Heat over medium heat until everything is warmed through, stirring occasionally, for about 5-7 minutes.
  3. Gently stir the cooked tortellini into the soup mixture along with the shredded Parmesan, allowing it to melt and blend into this creamy delight.
  4. Ladle the soup into bowls and serve hot, garnished with additional cheese or fresh basil if desired!
