  • 2 pieces Chicken breasts Boneless and skinless

For the Sauce
  • 2 tablespoons Olive oil For sautéing
  • 2 cups Spinach Chopped, fresh or frozen
  • 1/2 cup Sun-dried tomatoes Oil-packed for added flavor
  • 1 cup Heavy cream Can substitute with half-and-half
  • 1/2 cup Parmesan cheese Freshly grated
  • 1 teaspoon Italian seasoning Blends flavors

Cooking Instructions
  1. Season the chicken breasts generously with salt and pepper.
  2. Heat olive oil in a skillet over medium heat and cook the chicken for 6-7 minutes on each side until browned and cooked through.
  3. Remove the chicken from the skillet and set aside.
  4. Add the spinach and sun-dried tomatoes to the same skillet and sauté for 2-3 minutes.
  5. Stir in the heavy cream, grated Parmesan cheese, and Italian seasoning, and cook until the sauce thickens.
  6. Return the chicken to the skillet and let it simmer for another minute.
