  • 1/4 cup Avocado Oil or olive oil
  • 2 tablespoons Rice Vinegar or white wine vinegar
  • 1 tablespoon Toasted Sesame Oil or regular sesame oil
  • 2 tablespoons Lower-Sodium Tamari/Soy Sauce or coconut aminos
  • 1 tablespoon Freshly Grated Ginger or ground ginger
  • 1 clove Garlic freshly grated or minced
Salad
  • 2 cups Cucumbers sliced into rounds or half moons
  • 1 cup Shelled Edamame thawed if using frozen
  • 1/4 cup Green Onion thinly sliced
  • 2 tablespoons Toasted Sesame Seeds
  • 1/4 teaspoon Aleppo Pepper Flakes or red pepper flakes
  • 1/4 cup Fresh Basil optional, thinly sliced

Method
 

Preparation
  1. In a measuring cup, whisk together avocado oil, rice vinegar, toasted sesame oil, tamari, ginger, and garlic until well blended and smooth.
  2. In a large mixing bowl, gently toss together the sliced cucumbers, thawed edamame, cubed avocado, sliced green onions, and toasted sesame seeds until evenly mixed.
  3. Sprinkle in a pinch of salt and add the Aleppo pepper flakes. Drizzle the prepared dressing over the salad and toss everything together.
  4. Serve the salad immediately or transfer it to an airtight container and refrigerate for up to 3 days.
