Ingredients

For the Avocado Sauce
  • 1 medium Avocado Use a ripe avocado for the best creamy texture.
  • 1/2 cup Sour Cream Adds tanginess; Greek yogurt can be a healthier swap.
  • 2 tablespoons Fresh Lime Juice Brightens up the sauce; lemon juice works as an alternative.
  • 1/4 cup Cilantro Leaves Provides freshness; feel free to omit if you dislike cilantro.
  • 1/2 teaspoon Kosher Salt Enhances flavor; adjust to your taste preference.
For the Taco Filling
  • 2 tablespoons Avocado Oil Ideal for sautéing turkey; any neutral oil works well.
  • 1 pound Lean Ground Turkey Main protein source; ground chicken or beef are great substitutes.
  • 2 tablespoons Homemade Taco Seasoning Essential for flavor; use store-bought if you're short on time.
  • 1 cup Chopped Onion Adds sweetness and depth; consider green onions as an alternative.
  • 1 can Canned Black Beans Pack protein and fiber; be sure to drain them well, don’t rinse!
  • 1 can Green Chiles Introduce heat and flavor; substitute with any canned chiles you prefer.
  • 1 cup Shredded Monterey Jack Cheese Perfect for melting; cheddar or a Mexican blend can replace it.
  • 8 pieces Fajita-Sized Flour Tortillas Holds your filling well; corn tortillas are a gluten-free option, though more delicate.

Equipment

  • food processor
  • skillet
  • baking sheet

Method

Avocado Sauce and Taco Filling
  1. Blend half a ripe avocado, sour cream, lime juice, cilantro, and salt in a food processor until smooth. Refrigerate it to let the flavors meld while you prepare the tacos.
  2. In a skillet, heat avocado oil over medium heat. Sauté chopped onions until they become translucent, then add lean ground turkey and half the homemade taco seasoning. Cook until the turkey is browned and fully cooked, around 5-7 minutes.
  3. Stir in drained black beans, green chiles, the remaining taco seasoning, and chopped cilantro into the skillet. Let everything simmer for about 15 minutes, allowing the flavors to blend beautifully.
  4. Preheat your oven to 425°F (220°C). Spread a layer of shredded cheese on each fajita-sized flour tortilla. Fill them generously with the turkey mixture, fold, and place them seam-side down on a baking sheet.
  5. Place the baking sheet in the oven and bake the tacos for 10-12 minutes, or until the tortillas are golden brown and crispy. Keep an eye on them to achieve your desired crunchiness!
  6. Present the tacos hot from the oven, alongside the avocado sauce for dipping. Enjoy the delightful crispiness and rich flavors!
