Avocado Sauce and Taco Filling
- Blend half a ripe avocado, sour cream, lime juice, cilantro, and salt in a food processor until smooth. Refrigerate it to let the flavors meld while you prepare the tacos.
- In a skillet, heat avocado oil over medium heat. Sauté chopped onions until they become translucent, then add lean ground turkey and half the homemade taco seasoning. Cook until the turkey is browned and fully cooked, around 5-7 minutes.
- Stir in drained black beans, green chiles, the remaining taco seasoning, and chopped cilantro into the skillet. Let everything simmer for about 15 minutes, allowing the flavors to blend beautifully.
- Preheat your oven to 425°F (220°C). Spread a layer of shredded cheese on each fajita-sized flour tortilla. Fill them generously with the turkey mixture, fold, and place them seam-side down on a baking sheet.
