- Prepare the 'Honey' Mustard Sauce: In a mixing bowl, whisk together neutral oil, agave or maple syrup, mustard, salt, and pepper until well combined. Set aside to let the flavors meld.
- Prep the Tofu: Carefully drain and press the extra firm tofu for about 10 minutes to eliminate excess moisture, then slice it into 1-inch strips to ensure even cooking.
- Make the Batter: In a bowl, combine all-purpose flour, cornstarch, baking powder, salt, and optional paprika. Gradually mix in water, stirring until you achieve a smooth, thick batter that clings well to the tofu.
- Coat Tofu: Dip each tofu strip into the batter, making sure it's fully coated. Then, roll it in panko breadcrumbs to create a crunchy exterior.
- Bake: Preheat your oven to 350°F (175°C). Line a baking tray with parchment paper, arrange the coated tenders on the tray, spray or brush them lightly with oil, and bake for 30-35 minutes, flipping halfway through.
- Final Coat: Once the tenders are golden brown, brush them with the prepared 'honey' mustard sauce and bake for an additional 5-8 minutes to allow the glaze to set.
