How to Make Corn Ribs
- Cut off the ends of the corn cobs. Halve each cob for stability and then slice each half into quarters, creating 16 corn ribs.
- In a bowl, toss the corn ribs with olive oil, smoked paprika, cumin, garlic powder, and salt. Ensure they are evenly coated.
- In a small bowl, combine the plain vegan yogurt, chipotle pepper, lime juice, agave, and salt. Mix until smooth.
- For Air Fryer: Preheat to 380°F and cook for 8-10 minutes until crispy. For Oven: Preheat to 400°F, spread on a baking sheet, and bake for 10-15 minutes.
- Garnish with fresh cilantro and serve hot or cold with the chipotle crema for dipping.
