  • 1 teaspoon smoked paprika
  • 0.5 teaspoon cumin
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon salt adjust according to taste
  • 1 handful cilantro optional for garnish
For the Chipotle Crema
  • 0.5 cup plain vegan yogurt or vegan mayonnaise
  • 0.5 piece chipotle pepper in adobo sauce adjust depending on heat preference
  • 0.5 lime lime juice juice from half a lime
  • 1 teaspoon agave or honey for non-vegan adaptations
  • 0.25 teaspoon salt for crema

Method
 

How to Make Corn Ribs
  1. Cut off the ends of the corn cobs. Halve each cob for stability and then slice each half into quarters, creating 16 corn ribs.
  2. In a bowl, toss the corn ribs with olive oil, smoked paprika, cumin, garlic powder, and salt. Ensure they are evenly coated.
  3. In a small bowl, combine the plain vegan yogurt, chipotle pepper, lime juice, agave, and salt. Mix until smooth.
  4. For Air Fryer: Preheat to 380°F and cook for 8-10 minutes until crispy. For Oven: Preheat to 400°F, spread on a baking sheet, and bake for 10-15 minutes.
  5. Garnish with fresh cilantro and serve hot or cold with the chipotle crema for dipping.
