Ingredients
  

Filling
  • 2.5 tablespoons olive oil for sautéing
  • 1 medium yellow onion finely diced
  • 2 tablespoons minced garlic
  • 2 tablespoons minced ginger
  • 1 cup Yukon gold potatoes ¼ inch diced
  • 1 tablespoon curry powder
  • 1 teaspoon ground turmeric
  • 0.5 teaspoon cumin
  • 0.5 teaspoon sugar
  • 1.5 teaspoons kosher salt
  • 0.125 teaspoon black pepper
  • 0.75 cup coconut milk
Pastry
  • 1 pack Dufour puff pastry
  • 1 cup all-purpose flour for dusting
  • 1 large egg beaten
  • 1 teaspoon water for egg wash

Method
 

Preparation
  1. Heat olive oil in a pan over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.
  2. Incorporate minced garlic and ginger into the onions. Cook until fragrant, around 1-2 minutes.
  3. Add diced potatoes, curry powder, turmeric, cumin, sugar, salt, and black pepper. Stir to coat the potatoes with spices.
  4. Pour in coconut milk and cook until the potatoes are tender, about 10-12 minutes, stirring occasionally.
  5. Roll out the puff pastry on a floured surface to desired thickness.
  6. Cut pastry into circles and place a spoonful of filling in the center of each circle.
  7. Fold pastry over the filling to create half-moons. Crimp edges securely to seal.
  8. Mix beaten egg with water. Brush over the tops of the pastries for a golden finish.
  9. Bake according to pastry package instructions, usually at 400°F for about 20 minutes or until golden.
