  • 4 fillets Salmon skin-side down

For the Parmesan Crust
  • 1 cup Grated Parmesan Cheese or Grana Padano
  • 1 cup Panko Breadcrumbs or regular breadcrumbs
  • 1/4 cup Chopped Fresh Parsley or dill
For Flavors
  • 1/4 cup Unsalted Butter melted
  • 2 cloves Minced Garlic or garlic powder
  • 1 tablespoon Lemon Zest
  • 1 tablespoon Lemon Juice fresh
  • 2 tablespoons Olive Oil to drizzle

Method
 

Instructions
  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment or foil.
  2. Prepare the salmon by placing it skin-side down on the baking sheet and seasoning with salt and pepper.
  3. In a mixing bowl, combine the grated Parmesan cheese, Panko breadcrumbs, and chopped parsley.
  4. In another dish, stir together the melted butter, minced garlic, lemon zest, and lemon juice.
  5. Drizzle the garlic-butter mixture over each salmon fillet, coating evenly.
  6. Press the Parmesan breadcrumb mixture onto the salmon fillets to create a crust.
  7. Drizzle olive oil lightly over the crust.
  8. Bake for 12–15 minutes until cooked through and the crust is golden brown.
  9. Broil for 1–2 minutes for extra crispiness, watching closely.
  10. Allow the salmon to rest for 1 minute before serving and garnish with lemon wedges.
