- Preheat the oven to 375°F.
- Whisk together the large eggs, matzo meal, kosher salt, and black pepper in a large bowl until combined and smooth.
- Grate the potatoes and onion using a food processor with a grating attachment. Add this mixture to the egg mixture and gently toss to coat.
- Heat the canola oil in a small saucepan over medium heat until warmed. Stir the oil into the potato mixture.
- Transfer the mixture to a greased 13x9-inch baking dish, pressing it down to flatten the top.
- Bake for 40 to 50 minutes, or until the top is golden brown and crispy.
- Cool the kugel for at least 30 minutes before cutting into it.
