Method
 

Directions
  1. Preheat the oven to 375°F.
  2. Whisk together the large eggs, matzo meal, kosher salt, and black pepper in a large bowl until combined and smooth.
  3. Grate the potatoes and onion using a food processor with a grating attachment. Add this mixture to the egg mixture and gently toss to coat.
  4. Heat the canola oil in a small saucepan over medium heat until warmed. Stir the oil into the potato mixture.
  5. Transfer the mixture to a greased 13x9-inch baking dish, pressing it down to flatten the top.
