Method
 

How to Make Smashed Carrots
  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Cut fresh carrots into rounds and boil them in salted water for 10–12 minutes until fork-tender.
  3. Drain the carrots and let them cool slightly. Smash each carrot round until about half their original thickness.
  4. Arrange smashed carrots on the baking sheet, drizzle with olive oil, and sprinkle with garlic powder, smoked paprika, salt, pepper, and Parmesan cheese.
  5. Roast in the oven for 20–25 minutes, flipping halfway through, until crispy and golden.
  6. Garnish with freshly chopped parsley and serve hot.
